This Festive Bikini – How to Make It

WHere is an easy take on a drink featured on a new cocktail list. It's a party-sized prepared mix that is loaded with essence of the holiday season, which makes it perfect for your celebration. Reserve the remaining citrus syrup you can use for breakfast cocktails, puddings, or for another batch of this cocktail.

The Bikini Cocktail

Serves 10 servings

To make the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar

Ingredients for the Premix (yields 850ml, to serve 10)

400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Method

To prepare the Cordial: Put the listed ingredients in a pot, bring to a gentle boil, mixing so the sugar melts. Next, take off the stove and leave to cool down entirely. Decant into a sealable bottle, cap it and store chilled, it will last for about four weeks.

Preparing the Batch Mix: Pour all the spirits and syrup into one large bottle, allow it to infuse for 60 minutes, then pass it through preferably using muslin, to ensure it's completely strained.

For serving: Pour 85ml from the cocktail base into a mixing glass filled with ice, gently stirring gently for about 60 seconds until cold. Strain to a chilled martini glass or equivalent, decorate with the cranberries and finish with a quick spritz of mandarin oil above the glass.
